I'm on a quest to get labor productivity over to a estimating tool and winning at life. I'm wondering what other ways are there to do this, as ideally I would like to see the total hours to show up in zzTakeoff too so its not so closed ended.

I’ve been working through the same thing. Still not sure if this answers your questions, I'm on my second drink :), still holydaying.
One way I see it is to separate production rates from cost, so labour is driven by hr/unit and total hours come straight from quantities.
If zzTakeoff can be used in a way where total labour hours are calculated and visible, with production rates driving it, it becomes much more flexible and easier to adjust across the estimate.
Keeping hours separate from cost really opens it up and makes it closer to real-world estimating workflows.

currently I have a production rate custom property in takeoff level set to inherit into items . I like to try to control from here as much as possible so I don’t need to open items to make changes. I set my cost each on labour to cost of labour. it is limited because if you have multiple labour items with different production rates you need to break your inheritance. I mostly like this setup for now and I am able to get an accurate hours total if I group by cost type. All labour items need to be built the same way for this to work. It won’t show your units at the cost type level in reports but the qty is accurate.
